    Cured cheese, with 5 months of maturation, made with an equal fusion of raw sheep's and cow's milk at 50%. The combination of these two types of milk and their curing give it flavor, character, and a nutty and dried fruit aftertaste provided by the sheep's milk, and a slight spiciness due to the aged cow's milk. It is a mixed cheese, but not an ordinary mixed cheese, it is the house's special selection. El Antiguo de Castilla is made with 50% sheep's milk, unlike other mixed cheeses that are normally made with 90% cow's milk and the rest sheep's and/or goat's milk. Moreover, its name has history, in the past in the two Castillas, cheeses were made by mixing the milk obtained from the herds of sheep, cows, and goats, depending on the family's livestock. It was a traditional economy of milk utilization.
