Handcrafted, this aged cheese is made with raw sheep's milk from the Churra and Castellana breeds, pure and native breeds of the province, recognized for their dairy aptitude, with very notable quality levels, under the Protected Designation of Origin Queso Zamorano. With a brown rind and well-defined pleita, bathed in extra virgin olive oil during maturation. The paste is firm and compact, ivory-yellowish in color, with small eyes uniformly distributed throughout the cut. Zamorano cheese is characterized by genuine aromas and flavors, typical of raw sheep's milk, well-developed and persistent on the palate. Additionally, olfactory-gustatory characteristics can be appreciated, reminiscent of sheep's milk, cooked butter, or nuts, due to the traditional grazing system that feeds our sheep and its long maturation in the cellar.
