Cured cheese made from raw sheep's milk, selected from flocks of native breeds practicing traditional grazing. Aged in a cellar under optimal conditions between 4 and 6 months with controlled humidity and temperature, allowing us to obtain unique pieces. It is a pressed cheese with an intense flavor of raw sheep's milk; creamy consistency, velvety flavor, and very pleasant on the palate.
