    Resulting from two years of testing, we achieved a perfectly balanced cured cheese with truffle in flavor and aroma. A cheese with a firm and compact paste; with a hard brown rind and well-defined pleita. It has a buttery, soluble, and slightly adhesive texture. This cheese is made with truffle from the Italian Piedmont. Despite having tried truffles from other origins, the aroma and flavor were lost in the maturation process. With the Italian truffle, we achieved the optimal result and the excellence we were looking for. It contains 0.5% of 100% natural truffle, all the ingredients we add to our cheeses must be as natural as the sheep's milk we use to make them. Therefore, we avoid oils, concentrates, or truffle essences, which ultimately make digestion difficult and spoil the taste of both products.
