    Cheese made from 100% raw cow's milk, matured in a cave with natural mold growth. The interior is ivory white marbled with blue-green, with an intense and penetrating smell and a balanced flavor with a slight spiciness.

    The maturation process of this Cabrales cheese takes place in the Picos de Europa, after being carried one by one on foot or by donkey to the caves at temperatures between 8 and 12 degrees Celsius, allowing the natural development of Penicillium molds, which give it the characteristic blue-green veins.

    During its maturation process of between two and four months, the position of the pieces is changed inside the cave to season each side. Once the cheese is ready for consumption, it is wrapped in green aluminum foil, labeled with green bands and leaves characteristic of this Denomination of Origin, and a specific numbering from the Regulatory Council is added.
